Recipe 1: Caramel & Roussillon

Ingredients:

  • Caramel cheesecake Traiteur de Paris
  • Apricots baked in olive oil and rosemary
  • 3 small disks of apricot jelly
  • 1 large disk of apricot jelly
  • Cubes of apricot jelly
  • Milk chocolate disks
  • Pieces of salted butter caramel made with Guérande sea salt
  • Rosemary
  • Chantilly cream with olive oil

Recipe steps

  1. Place a large disk of apricot jelly onto the plate
  2. Add the Traiteur de Paris Caramel cheesecake
  3. Arrange the small disks of apricot jelly onto the plate and top each with a piece of baked apricot
  4. Dot the apricot pieces with rosemary
  5. Position small balls of Chantilly between each piece of apricot
  6. Decorate the balls of Chantilly with a disk of chocolate and a cube of jelly
  7. Finish the plate with pieces of salted butter caramel

Recipe 2: A medley of apples

Ingredients:

  • Caramel cheesecake Traiteur de Paris
  • Pink Lady apple, finely sliced using a mandolin
  • Balls of Granny Smith apple poached in a vanilla syrup
  • Balls of Golden Delicious apple cooked in a tarte tatin style
  • Vanilla Chantilly cream
  • Caramel cubes
  • Pieces of dark chocolate

Recipe steps

  1. Arrange the semi-circles of apple into a fish-scale pattern on a piece of baking paper
  2. Cut using a pastry cutter
  3. Turn the disk of apples out onto the plate
  4. Place the Traiteur de Paris Caramel cheesecake on the plate
  5. Dot small balls of Chantilly cream onto the plate and dessert
  6. Arrange the balls of Granny Smith and tarte tatin style Golden Delicious apple on the plate
  7. Decorate with small cubes of caramel and chocolate pieces
