  • Parmesan chantilly cream /li>
  • Fried basil leaf
  • Fillet of red mullet
  • Seasonal green vegetables
  • Olive oil

Recipe steps:

  1. Reheat the Vegetable Tatin for 15 minutes in a 180°C oven
  2. Sear the red mullet fillet cut into 3 pieces
  3. Place the Vegetable Tatin on the plate
  4. Add the 3 pieces of red mullet
  5. Place a quenelle of Parmesan chantilly cream in the centre of the Vegetable Tatin
  6. Garnish with a fried basil leaf
  7. Garnish the red mullet with cooked seasonal vegetables
  8. Finish by drizzling the plate with olive oil

Ingredients:

  • Traiteur de Paris Vegetable Tatin
  • Whipped cream with Espelette pepper
  • Chives

Recipe steps:

  1. Reheat the Vegetable Tatin for 15 minutes in a 180°C oven
  2. Cut it into 4 pieces
  3. Arrange the pieces on a long plate
  4. Place a quenelle of whipped cream with Espelette pepper on each piece
  5. Sprinkle with chives
