Recipe steps
Step 1
Reheat the Mediterranean Vegetable Tatin for 20 minutes at 180°C, then plate it in the center of a starter dish.
Step 2
Clean and prepare the sardines. Using a blowtorch, lightly sear the sardines flat-side down for a few seconds. Finish with a drizzle of olive oil and a pinch of fleur de sel mixed with toasted spices.
Step 3
Plate the dish: Arrange the warm Vegetable Tatin and the grilled sardine on the plate. Garnish with a dash of dill or basil oil, a few fresh herbs, and some pickled red onions.
Chef's tip
For a vegetarian option, replace the beef steak with a veggie steak.
