Recipe steps

Step 1

Reheat the potato waffle in a conventional oven at 180°C (350°F) for 20 minutes.

Step 2

Arrange the Waffle on the plate and top with a spoonful of fresh guacamole.

Step 3

Thinly slice half a ripe avocado, arrange the slices on the guacamole and sprinkle with chopped chives.

Step 4

Finish with the perfect egg and season to taste.

Chef's tip

Once served at the table, ask your customer to slit the egg to reveal its runny centre.
