Recipe steps
Step 1
Using a stencil (with a design of your choice), pipe the strawberry confit over the entire stencil, then spread it to cover the surface. Carefully remove the stencil.
Step 2
Place the Intense Strawberry dessert on its side, then arrange 9 strawberry slices on top of the dessert.
Step 3
Arrange small clusters of white flowers and meringue petals here and there on the plate.
Chef's tip
Using a petal-shaped stencil, pipe the meringue onto a tray lined with guitar sheets cut into strips. Spread the meringue and remove the stencil, then sprinkle with dehydrated raspberry before placing the meringue strip into a baking mold (gutter mold) suitable for the oven.
