Recipe Steps
Step 1
Draw the dessert up.
Step 2
Lay a few beautiful caramelised hazelnut slivers on the dessert.
Step 3
Poach the hazelnut caramel.
Step 4
Sprinkle with a few crystals of fleur de sel.
Chef’s tip
The recipe for hazelnut caramel:
- Ingredients: 160g caster sugar, 300g full cream, 200g crushed and roasted hazelnuts
- Recipe: to make a light caramel, pour the cream into a second saucepan and bring to the
boil. Remove from the heat and pour the hot cream into the caramel. Add the hazelnuts and
set aside.
